Chicken Tacos

Ingredients

2 chicken breasts
2 tomatoes, cored and chopped
1 can kidney beans, drained and rinsed
1 tbsp chili powder
1 package tortillas
1 cup sharp cheddar, shredded
4 scallions, thinly sliced
1 tsp salt
1 can corn, drained

Steps

  1. Cut the chicken into 12 inch cubes. Combine salt and chili powder in a large bowl. Toss the chicken to coat.
  2. Heat 1 tablespoon vegetable oil over medium heat. Cook the chicken until done.
  3. Add the kidney beans, tomatoes, corn and scallions to the pot with the chicken. Cover and cook for about 5 minutes on medium low heat.
