Chicken Tacos
Ingredients
| 2 | chicken breasts |
| 2 | tomatoes, cored and chopped |
| 1 can | kidney beans, drained and rinsed |
| 1 tbsp | chili powder |
| 1 package | tortillas |
| 1 cup | sharp cheddar, shredded |
| 4 | scallions, thinly sliced |
| 1 tsp | salt |
| 1 can | corn, drained |
Steps
- Cut the chicken into 1⁄2 inch cubes. Combine salt and chili powder in a large bowl. Toss the chicken to coat.
- Heat 1 tablespoon vegetable oil over medium heat. Cook the chicken until done.
- Add the kidney beans, tomatoes, corn and scallions to the pot with the chicken. Cover and cook for about 5 minutes on medium low heat.
