Chicken Enchilada Soup

Ingredients

3 cups chicken stock
2 chicken breasts
2 tsps cumin
2 tsps chili powder
12 tsp cayenne pepper
1 can 28 oz diced tomatoes
1 green bell pepper, diced
1 onion, diced
4 cloves garlic, pressed or minced
1 can 15 oz black beans, rinsed and drained
2 cups frozen corn
12 cup tomato paste
8 ozs pepperjack cheese
1 bag tortilla chips

Steps

  1. Add everything except cheese to crockpot. Cook on high 3-4 hours or on low for 8-10 hours. Serve with cheese and tortilla chips.
