Chicken Enchilada Soup
Ingredients
| 3 cups | chicken stock |
| 2 | chicken breasts |
| 2 tsps | cumin |
| 2 tsps | chili powder |
| 1⁄2 tsp | cayenne pepper |
| 1 can | 28 oz diced tomatoes |
| 1 | green bell pepper, diced |
| 1 | onion, diced |
| 4 cloves | garlic, pressed or minced |
| 1 can | 15 oz black beans, rinsed and drained |
| 2 cups | frozen corn |
| 1⁄2 cup | tomato paste |
| 8 ozs | pepperjack cheese |
| 1 bag | tortilla chips |
Steps
- Add everything except cheese to crockpot. Cook on high 3-4 hours or on low for 8-10 hours. Serve with cheese and tortilla chips.
