Egg Muffins

Degrease bacon very well with paper towels.

Ingredients

6 strips bacon
11 eggs
1 bag frozen potato cubes

Steps

  1. Cook bacon in 400 degree oven for 20 minutes. Soak up grease with paper towels before chopping. Dice into small bits.
  2. Fill silicon muffin pan cups about 34 with frozen potatoes. Add bacon bits.
  3. Beat 11 eggs. Add salt, pepper, and a little milk. Pour the eggs into muffin pan cups (almost filling each one).
  4. Bake at 375 degrees for 25 minutes. Let cool on the stove.
