Chicken Chili
Ingredients
| 1 | small yellow onion |
| 1 lb | chicken breast |
| 2 cans | 4 oz diced green chiles |
| 2 cans | 15 oz great northern beans, undrained |
| 1 can | corn |
| 4 ozs | whipped cream cheese |
| 2 cups | chicken broth |
| 2 tsps | salt |
| 2 tsps | cumin |
| 1 tsp | chili powder |
| 1 tsp | oregano |
| 1 tsp | paprika |
| 1 tsp | garlic powder |
| 1⁄4 tsp | cayenne pepper |
Steps
- In large slow cooker, add onion, chicken, stock, cumin, salt, chili powder, oregano, smoked paprika, garlic powder, cayenne pepper, green chiles, and beans. Cook on high for 4 hours.
- Remove chicken, chop into bite size pieces, then return to slow cooker.
- Stir in corn, cream cheese, and lime juice (optional) and continue to cook on high for 1-2 hours or until cream cheese is completely melted into chili.
