Chicken Chili

Ingredients

1 small yellow onion
1 lb chicken breast
2 cans 4 oz diced green chiles
2 cans 15 oz great northern beans, undrained
1 can corn
4 ozs whipped cream cheese
2 cups chicken broth
2 tsps salt
2 tsps cumin
1 tsp chili powder
1 tsp oregano
1 tsp paprika
1 tsp garlic powder
14 tsp cayenne pepper

Steps

  1. In large slow cooker, add onion, chicken, stock, cumin, salt, chili powder, oregano, smoked paprika, garlic powder, cayenne pepper, green chiles, and beans. Cook on high for 4 hours.
  2. Remove chicken, chop into bite size pieces, then return to slow cooker.
  3. Stir in corn, cream cheese, and lime juice (optional) and continue to cook on high for 1-2 hours or until cream cheese is completely melted into chili.
