Chicken and Broccoli Stir Fry
Ingredients
| 2 whole | chicken breasts |
| 3 cloves | garlic |
| 2 tsps | Olive oil |
| 2 tsps | Soy sauce |
| 1 head | broccoli |
| 2 whole | eggs |
| 1 package | Rice Noodles |
Steps
- Soak rice noodles in very hot water for 12-15 minutes to soften.
- Heat wok over medium high heat. Butterfly the chicken breasts and flatten them with a rolling pin. Slice the breast thinly. Season with salt and pepper. Add to wok
- Slice garlic into thin strips. After chicken starts to sear, add garlic to wok. Add broccoli to wok after garlic starts to brown. Add soy sauce for seasoning.
- Remove everything from the wok and wipe out the excess oils. Add a tsp of olive oil to the wok with wisked eggs. Let the eggs cook for a minute before adding rice noodles and chicken mixture. Make sure to keep rice noodles and chicken mixture separate for Trevor to eat without eggs.
