Chicken and Broccoli Stir Fry

Ingredients

2 whole chicken breasts
3 cloves garlic
2 tsps Olive oil
2 tsps Soy sauce
1 head broccoli
2 whole eggs
1 package Rice Noodles

Steps

  1. Soak rice noodles in very hot water for 12-15 minutes to soften.
  2. Heat wok over medium high heat. Butterfly the chicken breasts and flatten them with a rolling pin. Slice the breast thinly. Season with salt and pepper. Add to wok
  3. Slice garlic into thin strips. After chicken starts to sear, add garlic to wok. Add broccoli to wok after garlic starts to brown. Add soy sauce for seasoning.
  4. Remove everything from the wok and wipe out the excess oils. Add a tsp of olive oil to the wok with wisked eggs. Let the eggs cook for a minute before adding rice noodles and chicken mixture. Make sure to keep rice noodles and chicken mixture separate for Trevor to eat without eggs.
