Steps
- Cut chicken breasts in half, biased towards the thicker end.
- Coat the chicken with the spice rub and place on wire rack on rimmed baking sheet, foil lined, sprayed with vegetable oil.
Let rest for 30 minutes.
- Spray chicken with vegetable oil and set the thinner breast pieces aside.
Place chicken on the middle rack in a 450 degree oven for 10 minutes.
- Add the thinner breast pieces and roast another 10 minutes.
- Brush chicken with BBQ sauce and roast for 10 more minutes.
- Brush with sauce again and cook for another 10 or 20 minutes until registers 160 degrees.
Let chicken rest at least 10 minutes.
