BBQ Chicken

Ingredients

2 tbsps chili powder
2 tbsps brown sugar
1 tsp salt
14 tsp black pepper
1 package chicken breasts
bbq sauce

Steps

  1. Cut chicken breasts in half, biased towards the thicker end.
  2. Coat the chicken with the spice rub and place on wire rack on rimmed baking sheet, foil lined, sprayed with vegetable oil. Let rest for 30 minutes.
  3. Spray chicken with vegetable oil and set the thinner breast pieces aside. Place chicken on the middle rack in a 450 degree oven for 10 minutes.
  4. Add the thinner breast pieces and roast another 10 minutes.
  5. Brush chicken with BBQ sauce and roast for 10 more minutes.
  6. Brush with sauce again and cook for another 10 or 20 minutes until registers 160 degrees. Let chicken rest at least 10 minutes.
